Rotisserie Chicken Salad Sandwich

For New Year’s Eve my neighbors have a party for our side of the block. Each guest is invited to bring a dish for the party (store bought or homemade).
This year my Dad’s girlfriend brought catered sandwiches. She had a round plastic tray with three-inch high sandwiches, piled with roast beef and roasted red peppers, breaded eggplant and mozzarella, and one that caught my eye.
“What’s that?” I pointed to the cranberries on whole wheat bread.
“Chicken salad.”
“That looks fancy for chicken salad.”
I’ve never elected to eat tuna fish or chicken salad, since I don’t find the flavors to be that innovative, especially with the mayo. However, that catered chicken salad sandwich looked amazing.
I decided to do some research for different ingredients to add to chicken salad. I came across The Whole Cook’s chicken salad recipe, which I followed to make my rotisserie chicken salad sandwich on a croissant.

Can I substitute the mayo for another ingredient?
If you don’t like mayo’s fat content, The Whole Cook recommends using plain Greek yogurt, cream cheese, or sour cream.
I was hesitant to use those, as yogurt could be too thin and cream cheese/sour cream have distinct flavors. I didn’t think I would like the tang of sour cream nor the thickness of cream cheese.
I tried to use 1/2 cup of mayo instead of 1 1/2, but it wasn’t enough. In the end I used the full amount.
Can I make my own chicken for this recipe?
Of course! Boiled or grilled chicken would be healthier than rotisserie. However, the recipe is faster when using a premade chicken. I also feel that the rotisserie chicken adds flavor to this chicken salad recipe.
What can I substitute for ground mustard?
Food bloggers use different phrases to mean the same thing. I wasn’t sure if The Whole Cook said, “ground mustard” instead of “mustard powder,” and if they were the same ingredient.
I had mustard powder on hand, so that is what I used in my recipe.
During my research, I also saw that you can use normal mustard in place of dry mustard. You would use less, since it is stronger.
How to make a Rotisserie Chicken Salad Sandwich
I love that this recipe uses whole fresh ingredients.
I spent most of my time shredding my rotisserie chicken so that I would have 3-4 cups worth. Then chop your ingredients into tiny pieces. I made sure to chop my apple towards the end so that it wouldn’t brown.
I washed all of my fruit, so I didn’t mind leaving the skins on the Granny Smith apple for some extra color.
You can add as much of the fresh thyme and dill as you want. I added more towards the end and when I constructed my sandwich. Roughly chop it or tear it in your hands before dropping it into the chicken salad mixture.

Overall Thoughts
Flavor
I was happy and impressed with the final product! Creamy mayo, chunks of chicken, a bit of crunch from the almonds, juicy grapes, and subtle additions from the herbs and seasonings. I sprinkled more pepper and dill on my sandwich before I served it.
Serving and Storage
Croissants are my favorite for their buttery, flaky layers. I added about two or three tablespoons to my sliced croissant (not toasted). You can use your favorite bread to make this chicken salad sandwich.
If you’re taking the rotisserie chicken salad for lunch, keep the salad refrigerated. Build your sandwich before you sit down to eat.

10/10: I tweaked this recipe to match my preferences. In all I enjoyed the variety of textures, fresh ingredients, and fluffy croissant to make a delicious and light sandwich.
